Looking for a good strong cuppa? Look no further than Irish Breakfast. The Irish drink more tea per capita than anyone else in the world. This translates into roughly 6 cups a day, or a little over 7 lbs of tea, each year per Irishman. Suffice it to say, they like their tea. And as we hinted at, they like it strong. James Joyce, in his masterpiece Ulysses wrote the following passage, a dialogue between two characters that pretty much sums up the Irish take on the noble beverage. But, I say, Mulligan, you do make strong tea, don’t you? Buck Mulligan, hewing thick slices from the loaf, said in an old woman’s wheedling voice: When I makes tea I makes tea... Maybe it’s the cold damp weather, who knows, but as Joyce illustrates, the Irish know what to do with a teapot. The traditional Irish brew relies heavily on full-bodied, very malty teas from Assam in North Eastern India. The tea is brewed nice and hot and almost always blended with a little milk and sugar. Highly flavoury, warming and eye opening, it is not uncommon for the Irish to consume 2 or 3 cups before leaving the house in the morning. The infusion is thick, rich and frequently compared to that of Irish Stout, which if you’re familiar with, is one of the thickest, darkest beers on the market.

We’re pleased to offer this fantastic Organic version of the pride of Ireland. A heady blend of some of the world’s finest organic black teas, the cup is malty and profound, tending bright malt. Organic Irish Breakfast makes the perfect companion to an Irish breakfast fry-up, or quiet moment reading some Joyce. The next time you decide to really “makes tea”, this is the one to makes!

Hot Tea:
Put 1 slightly heaping teaspoon of loose tea for each 7-9 oz (200-260 mL) of water in the teapot. Pour freshly boiled water over tea. Steep 3-7 minutes. Add milk and sugar to taste.

Iced Tea:
Makes 1 litre: Put 6 slightly heaping teaspoons of loose tea into teapot. Pour 1 1/4 cup (315 mL) of boiling water on tea. Steep 5 minutes. Quarter fill serving pitcher with cold water. Pour into pitcher straining tea. Add ice, top-up with cold water, garnish and sweeten to taste.
